A Sand Cake is a very old-fashioned cake. It is a fine-textured cake, like a cross between a light sponge cake and a heavy butter cake.

Ingredients:

  • 110gm butter
  • 110gm sugar
  • 2 eggs
  • 110gm arrowroot or cornflour
  • 2 tbsp self-raising flour
  • 1/2 tsp baking powder

Icing:

  • 60gm butter
  • 2 lemons, rind finely grated
  • 2 cups icing sugar, sifted
  • 2 tbsp fresh lemon juice

 

Steps:

  1. Beat all the ingredients except the baking powder on medium speed for 10 minutes.
  2. Add baking powder.
  3. Cook in a well-greased 17cm ring tin for 30 minutes at 180C.
  4. When cold, ice with lemon icing.
  5. To make the icing, place the butter and lemon rind in a bowl. Beat with a wooden spoon until well-combined. Gradually add the lemon juice and icing sugar, mixing until well-combined. Spread over the top of the cold cake.
